Cabbage Pancakes
Ingredients:
1 small cabbage
1 egg
2 to 3 tablespoons flour or bread crumbs
Salt
Pepper
1 teaspoon mixed chopped parsley and dill
3 tablespoons lard or oil
Directions:
1. Julienne the cabbage, rub some salt into it, and scald with water. Drain well and grind.
2. Mix with egg, flour, parsley and dill, salt, and pepper.
3. Make pancakes from the mixture.
4. Dredge with flour or bread crumbs and fry in hot lard.

Grilled Minced Meat Rolls
Note:
This is a very traditional dish.
Ingredients:
2 pounds ground beef
1/2 pound suet
1/4 pound baking soda
2 to 3 cloves garlic
Ground pepper
Juniper berries and caraway
2 to 3 tablespoons meat broth
Salt
Directions:
1. Grind the meat together with the suet. Add salt, spices, chopped garlic, meat broth, and baking soda, and mix everything with your hands for 15 minutes, adding 2 tablespoons of water a little at a time.
2. Keep the bowl with this mixture on ice for 5 to 6 hours. Just before grilling, take tablespoons of the mixture and, with wet hands, shape the rolls (they are approximately 2 to 3 inches long and 1 inch thick).
3. Before placing on the grill, grease them with oil, and during grilling baste them with a mixture of meat broth and oil.

Biscuits
Ingredients:
5 ounces butter
5 ounces confectioners’ sugar
3 egg yolks
1 egg white
1 teaspoon vanilla
2 tablespoons ground walnuts
1 tablespoon granulated sugar
Flour, as needed
Directions:
1. Cream the butter with the sugar. Then add the 3 egg yolks, one by one. Add vanilla, ground walnuts, and flour. Knead quickly to make a soft dough.
2. Make patties about a 1/2-inch thick and 2-inches in diameter.
3. Place on a baking sheet, brush with beaten egg white. Mix ground walnuts with granulated sugar and sprinkle on top of biscuits.
4. Bake at medium heat.
Oranjada
Orangeade
Ingredients:
2 large oranges
2 lemons
15 lumps or teaspoons sugar
1 quart water
Directions:
1. Squeeze the lemons and oranges.
2. Strain the juice through cheesecloth.
3. Dissolve the sugar in water and then add the lemon and orange juices. Pour into a bottle with one piece of orange peel and refrigerate.
4. Serve cold after a few hours.
Patratele
Little Squares
Ingredients:
2 cups flour
1 1/2 cups sour cream
1 cup sugar
6 eggs
1 vanilla stick
Shortening, for greasing the pan
Vanilla-flavored confectioners’ sugar
Directions:
1. Beat the yolks with the sugar until they lighten up. Grind vanilla stick with a little sugar. Add vanilla and sour cream to egg yolks. Mix well and then gradually add the flour.
2. Whip egg whites, and then gently fold in flour mixture. Pour the batter into a greased pan and bake, at low heat, for 25 to 30 minutes.
3. When done, invert onto a wooden cutting board covered with a cloth. Sprinkle while still hot with vanilla-flavored confectioners’ sugar. When completely cold, cut into small squares and arrange on a plate.
