Curried Goat

Ingredients:
2 pounds mutton
1 teaspoon salt
1 teaspoon black pepper
1 onion, chopped
1 tablespoon curry powder
2 tablespoons cooking fat
1 1/2 cups water
1/2 pound potatoes, diced
2 peppers
Directions:

1. Trim and cut meat into 1-inch pieces. Season with salt, pepper, and onions. Rub in curry well and allow to stand for about an hour.
2. Heat fat in skillet. Add meat and sauté. Add water. Cover tightly and allow to cook on low flame until meat is tender.
3. Add potatoes and cook until very soft and gravy is somewhat thickened. Serve hot in a ring of fluffy rice.

Rundown

Ingredients:
3/4 pound shad, mackerel, saltfish, or crayfish
Limes
3 1/2 cups coconut milk
1 clove garlic, minced
Black pepper, to taste
1 large onion
Vinegar, to taste
2 country peppers
1 scallion stalk, minced
3 cooking tomatoes, cubed
Sprig of thyme
Directions:

1. Soak salted fish, rub with limes, and remove bones.
2. Bring coconut milk to boil until oil is almost formed. Add garlic, pepper, onion, vinegar, peppers, scallion, tomatoes, and thyme. Allow to cook for 10 minutes.
3. Add fish. Cook until done.

Yields:
4 servings

Ackee and Saltfish

Note:
Saltfish is dried, salted fish.
Ingredients:
1/2 pound saltfish (preferably cod)
1 dozen ackees
1 small onion, thinly sliced
1 teaspoon black pepper
3 slices hot pepper
1 small red sweet pepper, cut into rings
Cooking oil
Directions:

1. Soak saltfish in warm water. After soaking saltfish, place it in cold water and boil.
2. Clean the ackees thoroughly. Remove the seeds and all traces of interior red pit from the ackees. Cover and boil until moderately soft.
3. Drain, cover, and put ackees aside.
4. Flake the saltfish and remove all bones.
5. Sauté onions, hot pepper, and sweet pepper. Remove half of the fried onions and peppers and add saltfish and ackees. Turn the heat up slightly. Add black pepper.
6. Pour onto serving plate and garnish with remaining onions and pepper slices.

Johnnycakes

Ingredients:
4 cups flour
2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 cup butter or margarine
1/2 cup cold water
1 cup vegetable oil
Directions:

1. Sift the flour, baking powder, and salt together into a large mixing bowl. Cut in the butter or margarine until the mixture forms marble-sized balls of dough. Add the water 1 teaspoon at a time, just enough to bring the dough together with a firm consistency.
2. Heat oil in a heavy-bottomed frying pot over medium-low heat until hot.
3. On a lightly floured surface, knead the dough well, for about 5 minutes. Form pieces of the dough into slightly flattened biscuits about 2 inches across.
4. Fry the biscuits in the hot oil until they become golden (about 2 to 3 minutes).
5. Remove the johnnycakes and drain on paper towels to absorb the extra vegetable oil.

Banana Fritters

Ingredients:
1 egg
3 tablespoons flour
1 ripe banana, finely mashed
1 tablespoon sugar
1/2 teaspoon baking powder
Directions:

1. Beat egg.
2. Mix together sugar, flour, and banana until smooth. Fold in beaten egg. Drop by spoonful in hot fat. Fry until golden. Remove and dry on kitchen paper.
3. Sprinkle with granulated sugar and serve.

Yields:
4 to 6 servings
